Cooking with Laughlin – Post 5 – Bolivian Independence Day Edition

In celebration to Bolivia’s independence day we decided to make classic BBQ meals. I made my world famous broccoli salad. (It’s not world famous. It’s everywhere on the internet, but Ryan likes to call it world famous) Ryan grilled beef kabobs.

Beef Kabobs

1lb of beef cubed
1 white onion
1 green bell pepper
1 package of wooden or metal skewers

Put all the ingredients on the skewers in an alternating pattern. Grill for 10 minutes then flip and grill for 5 minutes more

World Famous Broccoli Salad

Salad
2 heads of broccoli
1/2 red onion
1 cup dried cranberries
1/4 C. sunflower seeds
1/2 pkg, bacon

Dressing
1/2-1 cup mayonnaise
1/2 cup sugar
1/4 white wine vinegar or regular white vinegar

Chop broccoli into bite sized pieces. Chop the onions. Cook bacon and crumble. Mix all ingredients together.

For the dressing mix all ingredients together and drizzle on salad and mix well. Set in refrigerator for 4-6 hours so the dressing saturates the salad and softens the broccoli. Enjoy!
