Cooking with Laughlin- Breakfast Scramble

Breakfast time is super important for us, partially because our lunch routine is different everyday and it’s usually PB&Js on the side of the road. Another reason breakfast is important is because breakfast food is just so darn good and we love eating!

This breakfast scramble is super easy and takes about 30 minutes total. We love making it at least once a week. Often, we talk about how we want to make this meal for friends and family when we get back because it is that good!


Ingredientes for two people:

1-2 medium potatoes chopped
1/2 onion chopped
1/2 can of mushrooms or fresh mushrooms
2 eggs
1C shredded cheese
salt and pepper

Additional items that can be added are:

Bell peppers
Breakfast sausage

Chop potatoes into bite sized pieces and add to pan with oil over medium heat. Once the potatoes are covered in, oil salt and pepper and then cover the pan with a lid. Since we don’t have lids for our pans, we just use a plate! Stir every 5ish minutes.


After about 15 minutes of cooking potatoes or when they are soft add chopped onions. Cook for 5 minutes then add bell pepper, mushrooms, etc. Once all the items are pretty well cooked to your liking, push everything to the side and turn up the heat. Crack the eggs into the open side and scramble right in the pan. Once the eggs are scrambled, mix everything together. Once everything is well mixed, cover with cheese, turn off the heat, and cover. After the cheese is melty, dish it up and cover with your favorite hot sauce!
